'On our annual \"Foodie Pilgrimage\" to the yearly Alchemy festival we always seek out the Dosa Deli street food stall; because as you probably know by now we love a good old dosa.   These guys have perfected and mastered the art of dosa making.......as always, all the dosas we eat from these guys are absolutely delicious.  \"Mr & Mrs Dosa\" (aka Amy and Kristian) are \"Master Dosa Makers\" or \"Dosa Wallahs\", they have travelled extensively in India & Asia,  whilst along the way \"doing their homework\" by somehow gleaning the tasty secrets, hints & tips from expert cooks & chefs with the ultimate aim of creating delicious master chef recipes; which they have achieved.  Many, many thanks to Kristian for taking time to say a few words about his \"Dosa Journey\" & as a bonus giving us a few hints to travelling (& surviving) in India.  The precise dosa batter is a well kept secret recipe........but \"Mr Dosa\" did let on that it consists of the following:  Rice Flour, White Lentils (Urad Dhal) & Water.  You\'d be forgiven if you thought that this was a \"Masala Dosa\" stall (or \"Lari\") somewhere on the busy, bustling streets, beaches or restaurants of India - astonishingly these Angrezi (English अन्ग्रेजी) guys were making the Indian pancakes in the heart of \"Proper London\" - making them freshly to order and serving them piping hot within a matter of minutes.........delicious restaurant quality food; but at affordable street food prices - with no service charge added !!!
