'Hi Foodies!!!!! Let\'s start with a small story. In 1964 a lot of Indians especially Tamil people were kicked out from Burma (now called as Myanmar). Our Indian government helped them set up a place for business in North Chennai now called as Burma Bazar. Our people started selling some famous Burmese dishes in the streets of Burma Bazar which has now become one of the famous street foods in Chennai. In this video let\'s try some delicious Burmese foods. Yes, Atho Noodles and Egg Bejo!! Atho Noodles: Ingredients: Ground Nut - 2 Table Spoon Bengal Gram Dhal - 100 gms Garlic - 10 Sliced Pieces Garlic - 2 Pieces Tamarind - 1 Lemon sized Cabbage - 1 (Sliced in small pieces) Coriander - One Handful of leaves Sliced Big Onion - 2 Piece Chilli flakes or Red Chilli - 10 to 15 Pieces Noodles - As required Salt - As required Eggs - As required How to make atho? Take some Bengal Gram Dal and soak in water for 3-4 hours. Take a pan and heat it in medium flame for two minutes. Take 2 table spoon groundnut and 3 spoon bengal gram dal and add it to the pan and cook it for one minute. Do not over cook. Add the nuts to a mixer and make it as fine powder. Again heat the pan for 1 minute and add 10 pieces of red chilli. If you have chilli flakes, you can use it too. Fry it for two minutes and grind it as coarse flakes. Add some oil in a pan and take a some sliced onion (we have taken one big onion) and fry it till it becomes brown in color. Make sure to fry each slices separately. Fried onion is one of the key ingredient for making Atho Noodles and Egg Bejo. In the same oil, take 10 pieces of sliced garlic and fry them till it becomes brown in color. Take the fried garlic slices along with oil in a separate bowl. Take a vessel for cooking noodles. Add some water and pre-heat it, add some salt as required and 1 table spoon of oil. Then add noodles as required and cook it for 15 - 20 minutes. Add enough water for the noodles to cook well. The average cooking time of noodles is purely dependent on the type of noodles you get from the supermarket. Once the noodles is cooked well, drain the excess water and keep it in a separate bowl. Take the soaked Bengal Gram dal which we kept initially, add 2 garlic and 1 red chiili and grind them as fine paste. Keep 1 table spoon of soaked bengal gram dal aside for later use. Take 2 table spoon rice flour in a bowl and add the bengal gram dal paste to it also add, 1 table spoon soaked bengal gram dal, salt as required and add water to it. Make it as batter for making Vada, which is another key ingredient for making atho. The consistency of this batter should be similar to that of Dosa batter. Take a pan add some oil and heat it in medium flame. Add one spoon of the batter and fry it till it becomes dark brown in color. Cook in medium flame so that the vada gets cooked all over. Once it is cooked cut them into small pieces. Take a big vessel and add some noodles, further add some cabbage, sliced onions, coriander leaves, fried onions, some pieces of vada, groundnut-gram dal powder 1 spoon, 2 spoon fried garlic slices along with oil, 1 spoon tamarind water, half spoon chilli flakes and salt as required. Mix them well and finally delicious, yummy atho noodles is ready to be served. Egg Bejo: Take some fully boiled eggs. Take one egg and slice it horizontally and not fully. Open the sliced egg and add 1 spoon salt water, 1 spoon tamarind water, fried onions, 1 spoon fried garlic with oil, again top it with some fried onion and some coriander leaf. Egg Bejo is ready!!!! In general Atho Noodles goes well with Egg Bejo. It was really a mouth watering recipe. This is a must try Burmese food!!
