'This is a sweet that is enjoyed in any special occasion whether it’s a wedding, Samathiya Veedu, birthday party or any occasion, you name it - it’s there. Us Srilankans love our sweets as much as we love our spicy curries. Find below how I made these: Ingredients: 1 cup semolina 3/4 cup granulated sugar 2 tbsp ghee 1/4 tsp cardamom pods 8 cashews (chopped) 10 raisins (chopped) 2 tbsp condensed milk 2 tbsp milk I ground semolina (rava) into a fine powder as well as the sugar. 1) Heat ghee in a pan 2) Add cashews and fry for less than a minute or until colour change. Then remove and keep aside 3) Do same with the raisins, remove and keep aside. 4) On a low heat, add semolina and roast evenly, making sure colour does not change. After about 5-6 mins take a pinch of rava and you will feel it has a rough touch. Put a little in your mouth and you will hear a crunch- this means it’s ready. KEEP STIRRING CONTINUOUSLY. 5) Add fried cashew & raisins into the rava and mix. 6) Add cardamom pods and sugar and mix together with rava. 7) Add condensed milk to rava mixture, at this stage get ready to remove pan from heat. 8) Wait till it’s warm enough to handle but do not let it completely cool. Using your hand roll the mixture into small golf size balls, do this immediately if you can. Roll it tight as possible. If you find the rava mixture is too dry to roll then sprinkle some milk as a binding agent, but add little by little till you’re able to form a ball. Tips: - I ground the semolina as well as the sugar to a fine powder, if its coarse,it will not hold the shape and easily broken. - Adding more ghee makes the laddu look dull in colour. So add accordingly. - you can use whole cashew and raisins but I find this bulky so chopped them instead. You can store these laddus in an airtight container at room temperature for about a week.
