Ingredients For Red Chutney : 1 Tablespoon Oil 1/4 Teaspoon Cumin Seeds 2 Red Chilies 1 Tablespoon Chopped Garlic 1/2 Cup Chopped Onions 1/4 Cup Gram Daal 1 Tablespoon Urad Daal 4 to 5 Curry Leaves 1 Teaspoon Ginger Paste 1/4 Cup Freshly Grated Coconut Salt to Taste Freshly Ground Black Pepper to Taste Red Chili Powder to Taste 1 Tablespoon Jaggery or Brown Sugar 1/4 Cup Tamarind Pulp 1/4 Cup Water Method of Making Red Chutney for Dosa : 1. Heat oil in a saucepan and add cumin seeds. 2. Let the cumin seeds splatter and add dry Red Chilies. 3. Add chopped garlic and onions, sauté 2 to 3 minutes. 4. Add Gram daal and Urad daal, sauté until lentils turn golden. 5. Add curry leaves, ginger paste, coconut, salt, black pepper. 6. Sauté 3 to 4 minutes and add chili powder, jaggery and tamarind pulp. 7. Add the cooked mixture into a small jar and add water. 8. Grind into smooth paste and delicious chutney is ready to use. Ingredients for Myore Masala Dosa : 4 Cups Fermented Dosa Batter Salt to Taste 1/4 Teaspoon Sugar 2 Tablespoons Butter 1 to 2 Tablespoons prepared Red Chutney 1/4 Cup Chopped Onions 1/2 Cup Red or Green Pepper 1/2 Cup Tomatoes Salt to Taste 1/2 Tablespoon Homemade Sambar Masala Water as Required 1 Boil Potato Chopped Coriander Leaves Method of Making Mysore Masala Dosa Street Style: 1. Combine salt and sugar with fermented batter. 2. Heat a flat pan and sprinkle little oil. 3. Spread oil evenly with paper towel. 4. Sprinkle water to bring down temperature. 5. Pour Dosa batter and spread evenly to form round Dosa. 6. Keep the Dosa thick and cook until dry. Lower the heat and add butter, red chutney, onions, red peppers and tomatoes 7. Add salt, sambar masala and 1/2 cup water. 8. Mix well using spatula and add 1 boil potato pieces. 9. Use a masher to mash all the vegetables. 10. Add 1/2 cup water and mash again. 11. Let it cook until 3 to 4 minutes. 12. Remove half the stuffing to serve with Dosa. 13. Keep the other half stuffing on one side of Dosa and fold into half. 14. Remove from pan and serve piping hot.
