'The traditional Sri Lankan Seen Sambol or  Caramelized onions ,are cooked low and slow until they are deeply golden and sweet.   This caramelized onion chutney with its combination of sweet and spicy flavor is a condiment popular among Sri Lankans.  WHAT IS SEENI SAMBOL? In Sinhala and Tamil, sambol means “sauce” or “condiment” & seeni means “sweet” or “mild”.   I added Maldive Fish, one of the key ingredient,  Maldive Fish.means dried tuna that can also be flaked, a kind of coarse meal used in Maldivian and Sri Lankan cuisine.    Ingredients 500 g of  Onions (sliced fine)  5-6 cardamom pods 1-inch piece cinnamon or 1 tsp powder  5 tablespoons of oil( increase if required) 2 tablespoons of brown sugar 3 tablespoons of Tamarind juice (if you are using tamarind paste 1 tsp) 5-6 Curry leaves 2 tbsp of chilli flakes (increase if you need the seeni sambol to be spicy) Maldive Fish 2 tbsp ( as you prefer salt to taste   Storing- keep the seeni sambol in a glass container.
