'Food Memes is a series where I cook and eat the various recipe videos that autoplay on Facebook that you never actually cook. (Recipe below; click \"Show More\") This first episode, I tackle Disney\'s Healthy \"Gumbo\" recipe that isn\'t gumbo at all. INGREDIENTS: 2 green peppers 1.5 cups okra, sliced 1/2 chopped onion 1 cup diced tomatoes 2 tbsp olive oil 1 diced garlic clove 2tbsp crushed parsley 1tsp thyme 1 tbsp crushed bayleaf 1/2 tsp oregano 1 tbsp chili powder 1.5 tbsp paprika 1 tsp salt 1 tsp pepper 2 tbsp whole wheat flour pinch of cayenne 2 cups low fat low sodium chicken stock 24 large shrimp 1 cup shredded kale 1 cup quinoa DIRECTIONS: 1. Place green peppers, onions, okra, tomato, olive oil in a pot. Cook them down. 2. Add garlic, parsley, thyme, bay leaves, oregano, chili powder, paprika, salt, pepper, flour, cayenne. Cook all that down. 3. Add chicken stock. Bring to a boil. 4. Add shrimp. Bring to a boil. Cook until shrimp are done. 5. Add shredded kale, cook for a bit. 6. Top with cooked quinoa'
