'LONDON STREET FOOD, CRISPY PORK BELLY SANDWICHES, POSH PORK BAP, BRICK LANE MARKET, Pigling Street is a hog roast food stand on Brick Lane. The meat is sourced from one farm in Suffolk, free range pigs so you know it\'s going to be good. Sizzling away on the stand is the hog and prepared for you as you watch. You can have the option of adding a fried egg and a couple of sauces. I went without the egg and the traditional apple sauce. The bap was filled with plenty succulent meat with a crispy edge and sweet apple sauce. The bread was soft and lightly toasted, making it a good start to a lazy weekend whilst browsing through Brick Lane market. Came to have my first ever proper pork bap. It came with perfectly cooked pork, including crackling, a runny duck eggs, apple sauce and lettuce. I\'m not usually a big fan of pork, but I really enjoyed this. You can have it with spicy sauce as well, but I liked the sweet flavour from the apple sauce which went really well with the pork. The crackling was fantastic, so crispy and great, with minimal fat. I had to knock a star off because mine also included some string used to tie the pork together which got stuck in my teeth (better there than in my belly). Really nice people who were running the stand who explained to us why they use pigs before they mature and start building up hormones which changes the flavour of their meat. Pork baps don\'t get better than this!! Theatre meets food meets satisfaction. You can\'t miss Pigling Street at Brick Lane as they literally have the longest line - and for good reason. Their stand is a piece of wonderful theatre, with the pork cooking right in front of you, the fresh ingredients on display and the BBQ on the side cooking up the bap and goose eggs! The Bap itself come with rosemary and garlic stuffing; bacon butter; a soft toasted brioche all topped off with delicious apple sauce Just writing this review is giving me motivation to travel down to Brick Lane to the porkest satisfaction I think I\'ve ever had!! This is certainly one of the best pork baps I have had in London. The pork is made from free range Blythburg pigs. The meat was very juicy succuluent and the crackling realy nice and crunchy. I loved the crackling so much I wish I had more of it. It was also served in a toasted brioche bun which made the whole sandwich even more heavenly. You can have all the trimmings in the sandwich but I like my food quite plain as I like to taste the meat however you can have various fillings from duck eggs to pickless. I highly recommend to any one that loves pork to stop on by and buy a sandwich from this amazibg market stall. Backyard Market\'s only five minutes from my place, so a big meaty burger goes down great if you\'ve had a big evening the night before and Pigling Street offer that up in spades! Every ingredient was delicious and the team were all friendly and more than happy to talk through where everything was sourced from. My only con was not realising that it had pork crackling and failing to actually take my first bite! Serving it up as a side so you could really crunch into that burger would\'ve been my preference, but again, delicious food, great people and a place I\'m sure to return to!
