'Traditional vs. Fusion in Filipino Food: Should Standard Be Adopted?'

'Casa Manila co-owner Rizalde Cuachon and the acting head of the Philippine Consulate General Toronto, Consul Rodney Jonas L. Sumague, had a fruitful conversation while dining at Casa Manila Danforth on Wednesday, April 5, about Filipino food - the traditional and newly-emerging fusion some Filipino restaurants are marketing to the mainstream. For example, should adobo or kare-kare be fused as to lose their authentic Filipino identity?  \"We could not achieve our national identity even in the food if we are not united,\" says Cuachon. To which Consul Sumague replied: \"One of our objectives is to mainstream Filipino cuisine\".'
